2. Shake briefly for 10 seconds.

3. Strain into an ice-filled Collins glass.

4. Top with soda water.

5. Gently stir once and garnish with a lemon slice and maraschino cherry.

A Drink With a Hoax

The Tom Collins originated from a bizarre prank in 1874 New York. People would tell their friends that a man called Tom Collins was talking about them in a nearby bar. When the victim rushed to confront this fictitious Tom Collins, the bartender would serve them this refreshing gin sour topped with soda.

The Perfect Summer Serve

Think of a Tom Collins as a gin sour stretched long with soda water. It's impossibly refreshing — the lemon cuts through summer heat, the sugar balances the acid, and the soda keeps it light enough to drink all afternoon.

Old Tom vs London Dry

Historically, a Tom Collins was made with Old Tom gin — a slightly sweeter style. Using Old Tom, you can reduce the sugar syrup slightly. With a London Dry, the drier spirit benefits from the full measure of sweetener.

Key Tips

  • Always use fresh lemon juice — bottled juice will ruin this drink
  • Add the soda last and gently — you want those bubbles
  • Serve immediately — a flat Collins is a sad Collins
