23 March 2026Hepple's triple-technique distillation (pot still, vacuum, and CO2 extraction) is clever, and at 45% it's got proper body. But the resulting London Dry feels a bit clinical to me. The grain lightness from vacuum distillation removes some of the warmth I look for. Respect the technique, just don't love the result.
