First Impressions

Crossbill Green uses three different parts of the Scottish juniper plant: blue juniper berries, green (unripe) juniper berries, and juniper needles — all handpicked from the Cairngorms National Park, macerated for six days then distilled in a 150-litre still in Glasgow's Barras. Where the original Crossbill uses just two botanicals, Green uses just one plant in three forms.

Tasting

The nose is captivating — fresh and invigorating juniper essence. On the palate, a punch of fresh bittersweet berry giving way to lasting citrus tang, the three juniper components creating distinct layers. The finish is rich, gently peppery and dry.

The Bottom Line

Crossbill Green earns a 7 for even more radical simplicity than the original. Using one plant in three forms is a bold concept that delivers — the green berries and needles add dimensions that ripe berries alone cannot achieve. Best with light tonic and rosemary or basil.
