Crossbill takes radical simplicity to its logical conclusion — just two botanicals: Scottish juniper berries and rosehip, both hand-picked fresh (not dried) from the ancient Highland pine forests. Launched in 2013 from Aviemore, it strips gin back to its essence. No citrus, no spice, no angelica. Just juniper and rosehip.
Tasting
The nose is big, bright, piney juniper with green forest notes and herbaceous-vegetal character balanced by citrus. On the palate, resinous fresh piney juniper blends into bright, sharp pine-citrus, building toward warming pine with slight tart floral rosehip sweetness. The finish is medium with warming pine and tart floral notes.
The Bottom Line
Crossbill earns a 7 for proving that two botanicals can make a compelling gin. The fresh Scottish juniper has a character that dried imported berries cannot match — almost exotic in its intensity. The rosehip provides just enough sweetness and fruit to prevent monotony. A bold statement of Highland terroir.
