First Impressions

Gin Eva Green Spice was created in collaboration with Michelin-starred chef Ingo Holland — using exclusively green botanicals: green juniper, green orange, green pepper, fig leaves, orange leaves, Californian bay, sencha tea and wakame seaweed. A culinary gin from Mallorca's terroir-driven distillery.

Tasting

The nose is fresh punchy juniper with bright citrus. On the palate, eucalyptus, peppercorn and salty sea air — green orange and fig providing Mediterranean character, sencha adding delicacy, wakame adding umami. The finish is salty-green and unique.

The Bottom Line

Gin Eva Green Spice earns an 8 for a Michelin-level culinary gin concept. The all-green botanical bill — including seaweed — creates something no other gin can replicate. From a distillery that continues to push boundaries with radical simplicity and terroir commitment.
