Hills & Harbour is made at Crafty Distillery in Galloway — one of the rare Scottish gins distilled with their own base spirit from local wheat in a 7-day fermentation. Noble fir needles handpicked from Galloway forests, bladderwrack seaweed from the coast, and mango for tropical fruitiness. Double Gold at San Francisco 2019.
Tasting
The nose delivers juniper with green herbaceous fir notes, citrus and sea air. On the palate, piney juniper into vibrant citrus and exotic mango — seaweed salinity with Sichuan pepper. The finish is clean and complex with peppery seaweed undertones.
The Bottom Line
Hills & Harbour earns an 8 for the most creative Scottish landscape gin — forest fir meeting coastal seaweed meeting tropical mango should not work, but Double Gold at San Francisco proves it does brilliantly. The in-house grain-to-glass production with 7-day fermentation adds depth that bought-in neutral spirit cannot match.
