First Impressions
Salcombe Daring is a Voyager Series limited edition created in collaboration with Michelin-starred chef Paul Ainsworth, inspired by his oyster dish 'A Tale of Porthilly' at No6 restaurant. Milk whey provides the velvety mouthfeel, oyster leaf brings umami, and Cornish botanicals complete the picture. Limited to 10,000 bottles at 46%.
Tasting
The nose is softly savoury with fennel, cardamom, juniper and anise, plus rich citrus with mineral crispness. On the palate, soft velvety mouthfeel from milk whey — sweet liquorice, zesty lime and blood orange with subtle umami from oyster leaf and earthy angelica. The finish is long and warm with savoury, contemplative character.
The Bottom Line
Salcombe Daring earns an 8 for an ambitious collaboration that delivers genuine culinary gin. The milk whey and oyster leaf create a umami dimension that is completely unique, and the Michelin-star provenance is no gimmick — this tastes like fine dining in a glass. At £66 for 50cl, it is premium territory, but the 'Who Dares Wins' cocktail makes it worthwhile.
