First Impressions
Siderit Distillery was founded in 2012 in Cantabria — the green, lush region of northern Spain's Atlantic coast, as far from the arid south as Spanish geography allows. Their flagship dry gin uses glass stills rather than copper, a choice that produces exceptional purity and allows the botanicals to express themselves without copper's influence. Sea fennel from the coast and raw Marcona almonds provide distinctly Cantabrian character.
Tasting
Eleven botanicals: juniper, coriander, sea fennel, cardamom, angelica root, cinnamon, bitter orange and mandarin peels, pink pepper, Marcona almond, and orris root. The nose is fresh and coastal — sea fennel providing maritime character with juniper and citrus. On the palate at 43%, clean and pure: the glass distillation is evident in the clarity of each flavour. Sea fennel's coastal saltiness, pink pepper warmth, dual citrus from mandarin and bitter orange. The finish is long with Marcona almond's nutty warmth.
The Bottom Line
Siderit Dry earns a 7 — a Spanish gin that captures Cantabria's Atlantic identity through sea fennel and Marcona almonds. The glass distillation is a genuine point of difference, producing a purity that copper stills cannot match. Best in a G&T with Mediterranean tonic and a twist of mandarin. At £35, northern Spanish craft with real terroir and an unusual production method.
