Sing Gin is inspired by the dawn chorus in the Cotswolds — the birdsong that accompanies early morning botanical foraging. Sweet cicely (an umbellifer with gentle anise flavour) and bergamot (Earl Grey's signature citrus) join elderflower and classic gin botanicals.
Tasting
Bergamot, sweet cicely, elderflower, and juniper. The nose is bergamot citrus with sweet cicely herbs. On the palate, floral and herbal with Earl Grey bergamot, anise-like sweet cicely, and elderflower. The finish is bergamot and herbs.
The Bottom Line
Sing earns a 7 — the sweet cicely is genuinely unusual among gin botanicals. Best in a G&T at dawn. At £42, the Cotswolds dawn chorus bottled.
