First Impressions
Thompson Bros Dornoch Edition 2020 removes the single malt barley spirit component from their Highland recipe, accentuating the bright citrus and fresh herbs. Inspired by a spring walk along Royal Dornoch Golf Course, it captures seasonal freshness in thirteen organic botanicals.
Tasting
The nose is complex yet not overwhelming — bright citrus with springtime herbal character. On the palate, lovely and mild with clean bright spirit accentuating citrus, bay leaf, rosemary and meadowsweet. The finish is rich and smooth.
The Bottom Line
Thompson Bros Dornoch Edition earns a 7 for a lighter, brighter expression from the Highland whisky distillery. The removal of barley spirit lets the botanicals shine with remarkable clarity. Seasonal and organic from start to finish.
