7/10Created in 2017 by master distiller Arko Ryynänen and Michelin-starred chef Jaakko Sorsa in Ilomantsi, a village on Finland's eastern border. Wild Arctic bilberries — smaller, darker and more intense than cultivated blueberries — are combined with juniper, cardamom and liquorice root using fresh Finnish spring water. Double Gold and Spirit of the Year 2018 at World Spirits Awards. Dry, warm, with coniferous forest character and a subtle berry sweetness.
