Deep piney spruce — a strong backbone of citrus, hints of flowers, bay laurel, lemon, just a hint of liquorice, the juniper wood adding resinous depth

Palate

Classic London Dry amplified — juniper and citrus dominating, rosemary and bay laurel present, the juniper-wood barrel adding warm vanilla-like sweetness and extra resinous pine character, wormwood providing bitter counterpoint

Finish

Bitter acrid wormwood — counterpointed by sweet almost vanilla-like flavour from the juniper cask, long and contemplative, the conceptual circle complete: juniper berry to juniper barrel

A conceptual triumph — Italian gin aged in small barrels made from juniper wood. The very tree that provided the berry also provided the barrel. Certified organic since 2018. Deep piney spruce, citrus, bay laurel, and wormwood bitter finish, all amplified by juniper-wood ageing.
